With a Strength build, I bash him over and over with a large weapon or make him stagger with the swing of a Greatsword. My mage uses Strength and the Greatshield of Artorias, so I can typically back away and take minimal damage.

I think trying to analyze and find some specific criteria for when to press the button is actually detrimental.

The explosion will send you across the room and deal very high damage. If you've been blocking Gwyn a lot at a close range, he will perform a front stomp kick, which will drain a large portion of stamina if blocked, and knock you down if not.
